Shrimp Enchiladas with Jalapeno Cream Sauce....

These shrimp enchiladas from Damn Delicious are seriously amazing!!!! I didn't include the chipotle pepper in adobo sauce and cut the cayenne pepper amount in half because I didn't want them to be too spicy for us. I used whole wheat flour tortillas instead of corn tortillas. Otherwise pretty much followed her recipe and added a little extra spinach too.

These were fantastic and I was uncertain of how they'd be leftover but they were really good. Definitely a new favorite in our rotation!

Copy cat Cheesecake Factory Shrimp Scampi...

I've never tried the Shrimp Scampi dish at Cheesecake Factory so I can't speak to how well this compares to the original, but we definitely thought this copy cat shrimp scampi recipe was delicious!

I did use less shrimp then it called for because although fried breaded shrimp is SO yummy it's not the healthiest. I also substituted a 13.25 oz box of whole wheat rotini pasta for the angel hair pasta suggested in the recipe as the rotini is more toddler friendly. In the directions of the recipe it didn't mention where to add the shallot, I assumed it should be added with the garlic when you begin the sauce in step 2.

Yum...honestly this picture doesn't do it justice, don't hold my inability to get a good pic of this dish against it, it's really scrumptious!

We have this awesome basil plant that has somehow lasted us since last summer, so we love dishes like this that call for fresh basil! If you know me well you know it's a miracle this plant has lasted so long in our house and yet it continues to thrive! We water it religiously every morning and it spends the rest of the day in it's spot by the window. We picked it up at Whole Foods last summer and it was well worth it since it's supplied all of our fresh basil to us for almost a year now! Nick prunes it regularly and it grows so fast I think we throw out more than we use.

Thai Pineapple Fried Rice...

This Thai Pineapple Fried Rice was one of those dishes that the minute I saw it on Pinterest I knew it was going to be a keeper and one that our family would love. There are so many great flavors and textures in this dish. I've tried a couple of dishes from Closet Cooking now, and both have been incredibly delicious!

It's also a great dish to add or substitute vegetables based on your family's preferences. For example, instead of using peas I added a large head of broccoli since our family prefers this vegetable. I also omitted the red chili as I didn't want the dish to be too spicy for my toddler. We add a bit more pineapple than the recipe calls for and use brown rice.

This dish is amazing and another leftover that we love to eat the following day!

Beautiful and delicious...this is one you've got to try...

Shrimp and zucchini tostadas....

These shrimp & zucchini tostadas have been a favorite at our house for several years now! They're another great easy-to-throw-together meal with just a few ingredients and a delicious result.

The cast of characters we use for this dish...

Tip from Rebecca's kitchen: I just defrost some large precooked shrimp for this. Also, I sprinkle some chipotle chili pepper seasoning on the shrimp to add some heat; careful not to add too much unless you like a lot of spice! As you can see in the above pic I just use the lime juice I have on hand. The smell when you add the lime juice to the sauteing garlic zucchini shrimp is amazing! We always use medium sized tortillas instead of the large burrito size and have also switched to primarily using whole wheat tortillas.

Yum, finished result....

Almond Crusted Pork Tenderloin and Shrimp Feta Mac & Cheese...

We love to make this Almond Crusted Pork Tenderloin with Mango Relish when we have friends over or for special occasions! It was first made for us by my dear friend and former co-worker Susan after we had Ian, and it quickly became a favorite of ours. We have always baked it in the oven, but there is also the option of cooking it on the grill. The mango relish is flavorful and fresh; we usually add extra mint when we make ours. Honestly, the mango relish itself would probably make an awesome appetizer with some pita or tortilla chips. We typically have some leftovers and it's still really delicious the next day!

Tip from Rebecca's Kitchen: We've found it's easier to roll the pork with the rub and almonds in a separate pan (or even just on some foil on the counter) before transferring it to the cookie sheet. This is because pieces that fall off the pork tend to burn at the high temperature. It really doesn't hurt anything since it just burns on the foil, but it can make the kitchen smokey.

LOVE this mango relish! Seriously, it looks so pretty and is SO delicious...

Next up, we love this Shrimp Feta Mac n Cheese, but when we're serving it with the pork tenderloin we usually leave out the shrimp so it's more of a side dish. When we make it as an entree itself for dinner we add in 1/2 pound of shrimp. And to make things easier I just buy the frozen precooked shrimp so I always have it on hand when I want to use it in a dish. I usually cut this recipe in half, make it in an 8x8 pan, and use a bit less lemon zest than what the recipe calls for. If you're not big on lemon you could definitely leave this step out and it would still be delicious. The Gruyere cheese is part of what makes this so delicious, and since I cut the recipe in half and only need 4 oz for the dish it helps to cut the cost down as well. I have never used as much dill as the recipe calls for, typically just 1/2 Tbsp and I use dried dill. This also makes an awesome leftover! When we make it as an entree for dinner we always have leftovers and love to heat it up for lunches the next day or two. You'll start to see on this blog -- we're big on leftovers in our house and love having extras for lunch the next day!

Tip from Rebecca's Kitchen: When mixing the sauce I've found it can thicken quickly so be ready. Also, if it thickens up too fast you can always add a little extra milk to it once you've mixed it with the pasta!
