Chocolate Chip Cookie Dough Dip...

I know I've been MIA for a while since having my daughter but am slowly trying to get back into this so hopefully I'll start posting here a bit more often:)

If you're looking for a delicious sweet treat to bring to a party this Chocolate Chip Cookie Dough Dip is an easy option that tastes amazing!

I usually get graham crackers to serve with it, break them into fourths and place them around the dip in the bowl.

Chicken Chimichangas...

These Chicken Chimichangas were delicious and as my friend Megan had suggested I skipped making the sauce and just added sliced avocado to the top! Using rotisserie chicken made this easier to throw together. We also skipped the rice because the chimi's themselves were more then enough for us.

Tettrazzini...

My friend Sara had recommended this Pioneer Woman recipe for Turkey Tettrazzini and it was definitely a keeper. I didn't have any turkey though so just made it a meatless dish the first time we made it and the second I used rotisserie chicken. I also used rotini pasta since it's what I had on hand. I hate olives so omitted those but those are the only changes.  Also thankfully Sara had given me the heads up that the original recipe makes a ton so I cut it in half. Now that I know we like it next time I think I'll make the full recipe, cook half and freeze the other half for in the future.

Green smoothie muffins...

This recipe for Green Smoothie Muffins is definitely a keeper in our house! They not only have tons of spinach, bananas and strawberries but our whole family loved them! The recipe also makes a ton, it made a whole dozen regular size muffins plus one and a half pans of mini muffins!!! I froze some of them and they've been just as good defrosted as they were fresh.

Crockpot Angel Chicken...

This is one of my absolute favorite crock pot dishes and is another recipe I have my friend Sara to thank for! It is so delicious and simple and the leftovers are seriously amazing too! At Sara's suggestion I have changed the original Angel Chicken recipe a bit. Instead of chicken breasts we always use just over a pound of chicken tenders. We also use half a container of cream cheese that's the chive & onion flavor...then we use the other half in a week or two when we make this dish again (we make it that often we like it so much)!  Also we use two packets of the Italian salad dressing mix & a can of golden mushroom soup and otherwise follow the recipe for the other ingredients. It only takes 4-5 hours in the crock pot and then serve over angel hair pasta. It's not a photogenic dish but trust me this is one your whole family will love!

Chicken & guacamole tostadas....

These Chicken & Guacamole Tostadas are a seriously fresh, delicious and simple meal! I only had flour tortillas on hand the night I made them so I just brushed those with a bit of EVOO and broiled them just a little. I also didn't have smoked paprika and just used regular, not sure how much of a difference this would have made but we loved these! I also used rotisserie chicken and really this recipe is all about mixing things together and no actual oven time is required (unless you broil the flour tortillas like I did) thus making it an awesome dish for summer nights! Oh and I had an extra avocado so I added that sliced to the top...SO good!

Cinnamon Chip Scones...

These Cinnamon Chip Scones from Bright Eyed Baker are seriously my newest addiction, I LOVE them so much!!! I have a mini scone pan so if I follow the recipe I usually end up with 10 mini scones. They are SO delicious!

If you're more into boxed mixes I've found the scone mixes from King Arthur Flour to be awesome as well, which is actually where I got the mini scone pan too!

This recipe for Crispy chicken tortilla roll ups thanks to rotisserie chicken was a relatively easy to throw together delicious meal. I subbed the serrano pepper for a jalapeno but otherwise followed the recipe.

Alfredo Chicken French Bread Pizza...

This Alfredo Chicken French Bread Pizza recipe from What's Cooking with Ruthie is such an awesome quick weeknight meal for the family! We had gotten a rotisserie chicken to use for another recipe earlier in the week and had an extra cup of shredded chicken that was perfect for this. We split the recipe in half since there are just three of us and just used one loaf of french bread and still had leftovers which were also delicious by the way! This is definitely a pizza we'll be making again at our house, so simple & so delicious!

Blackened Salmon Tacos...

These blackened salmon tacos from Six Sisters were a nice change of pace, even though I completely forgot to get an avocado at the store they were still good and I'm sure would be even better with that ingredient added to the mix!

I didn't bother making the sauce in the food processor and to make it simpler just mixed all those ingredients in a bowl, just depends on the consistency you like if this would work for you. I also used canned corn because it's what I had on hand at home.

Butternut Squash & Black Bean Enchiladas....

So I've noticed a trend....we obviously love enchiladas at our house since I've posted a ton of different enchilada recipes on here:) This is a delicious vegetarian option that we tried recently, at least for us it's hard to go wrong with any combination of butternut squash and black beans! These Butternut Squash & Black Bean Enchiladas are full of delicious veggies!

Meat & Cheese Stuffed Pasta Shells...

This recipe for Meat & Cheese Stuffed Shells is an old favorite that's been a constant of ours for several years. They are so delicious and even our toddler devours them! We follow the recipe as directed and use Prego Fresh Mushroom spaghetti sauce. They also make great left overs! This is definitely one of those dishes that everyone in your family will love!

Shrimp Enchiladas with Jalapeno Cream Sauce....

These shrimp enchiladas from Damn Delicious are seriously amazing!!!! I didn't include the chipotle pepper in adobo sauce and cut the cayenne pepper amount in half because I didn't want them to be too spicy for us. I used whole wheat flour tortillas instead of corn tortillas. Otherwise pretty much followed her recipe and added a little extra spinach too.

These were fantastic and I was uncertain of how they'd be leftover but they were really good. Definitely a new favorite in our rotation!

Chicken Pot Pie...

This is my grandmothers recipe for Chicken Pot Pie and a great winter meal that provides delicious leftovers.

1 chicken breast
2 cans cream of chicken soup
1 large package of frozen mixed vegetables
1 stick of unsalted butter
1 can of chicken broth (make from chicken)
1 cup flour
1 cup milk

Boil chicken breast until cooked, usually 15 min or so. Set on plate to cool and cut into bite sized pieces or shred. In medium sized bowl mix 2 cans of cream of chicken soup, frozen veggies, 1 can of chicken broth and small cut pieces of cooked chicken. In greased 9x13 pan pour ingredients from bowl. In another bowl, placed melted butter, add 1 cup flour and milk, whip together and pour evenly over top of pot pie. Put in oven and bake at 400 degrees for one hour.

I sometimes add more veggies dependent on what I have on hand.
